Detailed Steps for Making Rice Cake
Prepare the ingredients, and soak the rice for at least 4 hours.
Separate the 3 eggs into egg whites and yolks, set aside the yolks.
Drain the soaked rice and add egg yolks, a suitable amount of sugar, and milk, then process them together into a rice paste using a food processor.
The mixed rice paste should be thick, and you should be able to see patterns when stirring.
Add a little white vinegar or lemon juice to the egg whites.
First, use a whisk to beat until coarse bubbles form, then gradually add an appropriate amount of sugar to beat until stiff peaks form.
When the egg whites are beaten to a dry state, add them to the egg yolk rice paste in 3 portions.
Fold gently until well combined.
Pour the cake batter into the remaining egg white foam and fold gently until well combined.
Brush the mold with oil.
Pour the cake batter into the mold and place a few raisins on top.
Cover with plastic wrap and make a few vent holes with a bamboo skewer.
Steam over high heat for 40 minutes.
