Rice Companion – Stir-fried Enoki Mushrooms with Chinese Sausage Detailed Cooking Steps
5 sprigs of enoki mushrooms and 2 pieces of Chinese sausage.
Slice the Chinese sausage and enoki mushrooms thinly, about 2-3mm.
Blanch the enoki mushrooms in hot water and set aside.
Heat a suitable amount of peanut oil.
Sauté minced garlic and ginger until fragrant.
Add enoki mushrooms and Chinese sausage.
Add a generous spoonful of oyster sauce and a little water.
Add an appropriate amount of light soy sauce, stir-fry evenly, and ideally cook the enoki mushrooms until slightly golden.
Add a little less than a teaspoon of salt, stir well, and turn off the heat. (Oyster sauce contains salt)
Plate the dish. Garnish with green and red peppers.
