Clean one chicken thigh.
Use scissors to remove the bones.
Cut into small pieces.
Cut 8 chestnuts in half, add 2g cooking wine, 20g light soy sauce, 40g dark soy sauce, 20g oyster sauce, 10g sugar, 10g minced garlic, 5g minced ginger, and a little scallions.
