Rock Sugar Red Date Bird’s Nest Cooking Steps
Soak the bird’s nest for 2-4 hours, changing the water twice during the process. If there are bird’s nest feathers that are not easy to soak, tear them open manually and then soak them.
Then tear the bird’s nest into thin strands according to the texture. Check for fine hairs and rinse the bird’s nest with cold water to filter them out.
Prepare the red dates by cutting open a few large dates and removing the pits. Set aside.
Place the bird’s nest and red dates in a stew pot and add enough mineral water to cover the red dates.
Stew over indirect heat: Cover the stew pot and place it in a larger pot with water filled up to one-third of the stew pot. Bring to a boil over high heat, then simmer for half an hour over low heat. Add a little rock sugar 5 minutes before removing from heat.
