Separate the egg whites a day in advance, wrap them in plastic wrap and refrigerate overnight. Pour powdered sugar, lemon juice, and vanilla extract into the egg whites, beat over simmering water until the egg whites reach about 60 degrees Celsius, then remove from heat.
Continue beating until the egg whites cool to room temperature, smooth and glossy. Add strawberry powder and mix on low speed.
Pipe the meringue into a baking tray lined with parchment paper using a round or flower-shaped piping tip, such as a cherry blossom tip.
Preheat the oven to 100 degrees Celsius. I made two trays, place them in the oven with one above the other. Bake at low temperature for 1 hour, then switch the positions of the trays and continue baking at low temperature for another hour. Take out one meringue from each tray to cool slightly and check if they are crispy inside and out. If they are crispy, do not remove them immediately, close the oven door and let them sit for 30 minutes.
Seal and store the cookies after they have cooled. They can be stored for several days.
When serving, you can also fill them with whipped cream or slightly sour fruit jam. I used rhubarb strawberry jam, which pairs well.
They make a great dessert decoration and are perfect for enjoying during afternoon tea. Adding a small cherry blossom to your coffee also adds a touch of romance.
