Steps to Make Russian Honey Cake
My big spoon and small teaspoon
Ingredients ready
Melt butter, fructose, and honey together in a bowl and stir over a hot water bath until the butter is melted. Then slowly pour in the beaten eggs and continue stirring.
Add baking soda and salt while stirring until the mixture thickens slightly.
Add flour gradually and mix until the dough is formed.
Divide the dough into six equal parts and roll each part into a round cake about 0.3-0.5mm thick.
Bake the cakes in the oven at 180°C for about 3 minutes. Then use a suitable lid to cut them into circles.
Use the leftover cake scraps for later use.
Cook the condensed milk over low heat until it turns light brown, stirring constantly. Let it cool and then mix it with sour cream.
Spread the condensed milk sauce on each cake layer to stick them together.
Use a blender to crush the leftover cake scraps into small pieces and sprinkle them on the outside of the cake.
There you have it, a traditional Russian honey cake. Of course, you can also get creative and decorate the cake as you like!
