Detailed Steps for Making Sago Pudding
Soak the sago in water for 20 minutes.
Remove and cook in boiling water over medium heat for 10 minutes, stirring occasionally to prevent sticking, then turn off the heat.
Cover and bake until transparent, then rinse with cold water, drain and set aside.
Mix 100ml of fresh milk with custard powder, then add egg mixture and set aside.
Add the remaining 150ml of fresh milk to evaporated milk, sugar, and butter.
Cook over medium-low heat until dissolved.
Add the mixture from step 4, stirring constantly until thickened.
Finally, add the cooked sago without boiling.
Place half of the cooked mixture into the pudding mold, and optionally add fillings such as lotus seed paste, red bean paste, etc.
Preheat the oven to 200 degrees.
Pour the sago pudding mixture into the mold until 90% full, place in a baking dish with half-filled water, bake for 15-20 minutes, or until the surface is lightly browned.
