Detailed Steps for Cooking Salted Pork Trotters
Take a fresh pork trotter, make some cuts without breaking it, spray some vodka on the surface, wait for the alcohol to be absorbed. Other high-proof white liquor can also be used.
Evenly coat the pork trotter with pepper salt powder. I used this kind of pepper salt powder directly, you can also fry Sichuan peppercorns and salt together, but the meat will be saltier. When cooking later, boil it first to remove some salt.
Place the pork trotter in a container, refrigerate for 10 days. Check on the third day, if there is any liquid, pour it out and sprinkle some pepper salt powder again. After 10 days, the pork trotter can be eaten directly. If you want to continue storing it, wash off the pepper salt powder, dry the surface moisture of the pork trotter, cut it into pieces, and freeze it in the refrigerator.
I prepared to eat it directly, washed off the pepper salt powder, cut it into pieces, boiled some spring onion and ginger slices to make a broth, added the pork trotter, boiled for 5 minutes to remove some salt. Set aside.
Cut 1 white radish into pieces and set aside.

If you don’t have mushroom seasoning, you can use chicken bouillon as a substitute.
