Prepare the ingredients.
Mix all ingredients except butter together and knead into a dough of suitable texture.
Continue kneading after adding butter until the dough is stretchy and can be pulled into a thin, resilient film.
Let the kneaded dough ferment in a warm place. Poke with floured fingers – if the hole doesn’t collapse or shrink, the first fermentation is done.
After deflating the fermented dough, divide it into four portions, then take each large portion and further divide it into a small portion of about 30g, letting it rest for 15 minutes.
Take a rested large portion, roll it into a round dough, and wrap it with a portion of red bean paste filling.
Pinch the edges together like making dumplings, sealing them tightly.
Shape the filled dough into an oval, slightly flatten it, and place it with the sealed side down on a baking tray for the second fermentation.
