Steps for making Scallion Oil Noodles
Cut the scallions into sections.
Heat the oil and put the root of the scallions in it, fry on low heat.
Then add the green part of the scallions and fry until slightly yellow, then remove the scallion sections.
Add cooking wine, light soy sauce, dark soy sauce, oyster sauce, granulated sugar to the scallion oil in the pot, and continue to simmer on low heat until it reaches the desired consistency.
The sauce is ready.
Cook the noodles: I used alkaline noodles, but any type of noodles will do.
Cook to your desired texture, then rinse with cold water.
Add 3 to 4 tablespoons of sauce to the noodles (depending on the amount of noodles), mix well, and sprinkle with scallions. Enjoy the rich and delicious flavor.
