Boiling water: 200g; Cooking oil: a little; Scallions: a small handful.

Steps to make Scallion Pancake
Stir the flour with chopsticks while pouring in boiling water;
Add a little cooking oil to the dough, dip it in cold water and knead it into a smooth dough, cover it with plastic wrap and let it rest for 30 minutes;
Divide the dough into 4 equal parts, and roll each part into a thin round sheet;
Chop the scallions, add a little salt and a little cooking oil and mix well, sprinkle on the dough sheet;
Cut the dough sheet into 9 squares, fold it layer by layer as shown in the picture;

Roll it out from the middle to the edges;
Add a little oil to a frying pan, fry both sides over medium heat until golden brown.
