Heat oil in a pan over low heat, slowly fry the scallions until crispy for about 20 minutes. Make sure to use plenty of scallions for a fragrant flavor.
In a bread machine bucket, pour in boiling water and salt, then add flour and mix with boiling water until it forms a cotton-like texture.
Then set the bread machine to knead the dough.
Knead the dough for about 20 minutes. This dough doesn’t need to be kneaded for too long, just until it’s smooth. Then refrigerate overnight. I usually prepare it the night before, so I can roll out the dough directly in the morning. Typically, let it sit for about half an hour to an hour before rolling out the dough.
Knead the dough until smooth, then roll it into a large circular shape.
Sprinkle scallion oil and some chopped scallions on top.
Roll up the long side tightly, pinching the edges.
