Steps to Cook Seafood Congee
Marinate the pork strips with soy sauce, cooking wine, and pepper for fifteen minutes.
Soak glutinous rice and rice for 3 hours. Meanwhile, prepare the seafood: shell and clean the abalone, cut one abalone into three pieces, devein the shrimp, separate the horseshoe crab shell from its body, remove the gills and stomach, clean and cut the clams, and prepare the baby squid.
Bring a suitable amount of water to a boil in a clay pot, add the soaked glutinous rice and rice, add a teaspoon of tea oil to prevent water from overflowing the pot. Stir constantly with a ladle to prevent sticking, add ginger when the water boils.
After the rice blooms in the pot, add the baby squid, pour in cooking wine to remove the fishy smell, cover and bring to a boil.
