Detailed Cooking Steps for Sesame Roll
Heat brown sugar with whole milk until sugar is completely melted, then pour into flour. When the milk is not too hot to touch, sprinkle in yeast, stir with chopsticks to form dough, gradually add a little warm water, stir into a thick batter, cover with plastic wrap, keep warm and humid for four hours until the dough is filled with irregular large bubbles.
After the first fermentation, add an appropriate amount of flour. Knead into a dough with a moderate softness, cover with plastic wrap, keep warm and humid, ferment for three hours for the second time. When the dough has fermented to 2-2.5 times its size, it will be filled with regular small bubbles.
Take out the dough after the second fermentation, knead to remove air. Take a piece, roll it into a long and thick sheet, drizzle with vegetable oil, sprinkle with a little salt, and roll it up into a long roll.
Spray water on the rolled dough, sprinkle with white sesame seeds. Preheat the oven to 150 degrees Celsius with both top and bottom heat for five minutes, then bake the sesame roll for 30 minutes.
The sesame roll is ready when it turns slightly golden brown.
