Detailed Steps for Cooking Sha Cha Minced Pork with Eggplant
Wash 1 eggplant and cut the pork into minced pieces. Prepare the Sha Cha sauce, I used the Emperor Brand Sha Cha King, which tastes good. Chop the green onion, ginger, and garlic into minced pieces.
Cut the eggplant into thick strips, not too thin, and immediately soak them in water to prevent oxidation and browning.
Heat a wok with an appropriate amount of oil, add the minced pork and stir-fry until it changes color. I used lean meat, if you use a mix of lean and fatty meat, you will need to stir-fry a bit longer to render out the fat from the fatty meat.
Add the chopped green onion, ginger, and garlic and stir-fry until fragrant.
Add the eggplant strips and stir-fry until softened over high heat.
Season with 2 tablespoons of Sha Cha sauce and a little salt.
Stir well, you can add a little red pepper for color, but it’s optional.
