Steps for cooking Shrimp and Crispy Sausage Braised Red Rice
Chop the tomatoes into small pieces; Finely chop the celery (do not remove the tender leaves); Peel and devein the shrimp (because the shrimp are too large, I cut them into smaller pieces);
Finely chop the onion; Slice the crispy sausage; Finely chop the garlic; Wash the bay leaves and set aside; Cut the finger pepper into small circles;
Heat the pan, add half of the butter and 2/3 tablespoon of lard, melt and mix well;
Add the chopped celery, onion and garlic, stir-fry for about 1 minute;
After stir-frying the tomatoes, pour in the chicken broth, add bay leaves, black pepper, chili, dried thyme and vinegar, cover and cook for 15 minutes;
Remove the bay leaves, season with salt, and pour into a bowl;
Heat another small cast iron pan, add the remaining butter and lard, and stir-fry the washed red rice for about 1 minute;
Then pour in most of the previously cooked soup, stir well, cover, simmer over low heat for about 30 minutes until the rice is cooked, then turn off the heat and let it simmer for 10 minutes;
Heat another small frying pan with a little oil, add the crispy sausage and fry for a while and then remove it from the pan (you can also skip this step);
Stir-fry the remaining soup, add the shrimp and stir-fry;
Then add the fried crispy sausage and stir-fry until the sauce thickens;
Fluff the cooked red rice, add the shrimp and sausage, and mix well to serve~~
