Steps for Cooking Shrimp and Leek Buns
The dough is fermented and has a honeycomb-like texture.
Knead until smooth and let it rest for a while.
Shrimp filling (leftover from making shrimp dumplings for lunch).
Roll into long strips.
Cut into even pieces of dough.
Flatten.
Roll into a circular shape.
Wrap with filling.
Pinch into a leek shape.
Brush a layer of corn oil on the bamboo steamer, place the buns on top and let them rest for a second time.
Add cold water to the pot, put in the rested buns, steam on high heat, turn off the heat after 15 minutes of steaming, and steam for another 3 minutes with residual heat.
