Steps for Shrimp and Steamed Bun Stir Fry
Thaw the fresh shrimp and remove the shrimp line, head, and shell.
Add salt, sugar, and chicken bouillon to the shrimp and mix well. Add egg white and starch to coat the shrimp.
Cut the shrimp into small pieces and add salt, sugar, and chicken bouillon. Coat the shrimp with egg white and starch.
Peel and cut the cucumber and carrot into small pieces.
Cut the steamed bun into small pieces.
Heat the oil in a wok until it is 30% hot, then add the shrimp and cook until done. Remove the shrimp and drain the oil.
When the oil is 60% hot, add the steamed bun pieces.
Fry until golden brown, remove and drain the oil, then place the steamed bun pieces in a dish.
Heat the wok, add a little oil, and stir-fry the chopped scallion and ginger until fragrant.
Add the carrot and stir-fry.
