Detailed Steps for Cooking Shrimp and Vermicelli Clay Pot
Remove the shrimp’s digestive tract, trim the whiskers, wash and pat dry. Soak the vermicelli until soft, then set aside. Finely chop the green onion, ginger, and garlic.
Heat oil in a pan, add the shrimp and fry until both sides turn red. Use a spatula to press the shrimp heads to release the shrimp oil. Set aside.
Use the red oil from frying the shrimp to stir-fry the minced pork until it turns white.
Add the chopped green onion, ginger, and garlic, and stir-fry until fragrant.
Add the Pixian Doubanjiang and stir-fry until the oil turns red.
Add cooking wine, soy sauce, and white sugar, and stir well. Transfer to a clay pot.
Add broth or boiling water and bring to a boil.
Add the vermicelli.
Place the fried shrimp on top. Bring to a boil over high heat, then simmer over low heat for about 3 minutes.
Sprinkle with chopped green onions before serving.
