After washing the rice, add an appropriate amount of water (enough water at once), add a few slices of ginger, and simmer until the rice grains bloom (the thickness of the congee can be controlled by the cooking time according to different tastes).
After cleaning the shrimp, remove the head, whiskers, and sharp parts, as well as the shrimp brain and vein. Cut it in half.
