Steps for making Shrimp Tempura
Wash the shrimp, remove the head, shell, and tail tip. Cut three slits on the top, middle, and bottom of the shrimp with a knife. Pat dry with a paper towel and coat the surface with a thin layer of flour.
Take 100g of tempura flour and add 150ml of ice water. Mix well and set aside.
Heat oil in a pan to 160-180 degrees Celsius. Hold the shrimp tail and coat the shrimp with a thin batter. Fry the shrimp until golden brown (about 1 minute).
Place the fried shrimp tempura on a paper towel to drain excess oil. Serve with grated daikon radish, lemon juice, and a mixture of Japanese soy sauce, mirin, dashi stock, and granulated sugar to make the dipping sauce.
