Cut the tofu into pieces, shred the ginger, and cut the scallions and garlic chives into sections.

Add cooking wine and dark soy sauce, stir-fry until fragrant and the oil is released, then add a packet of Sichuan-style spicy bean paste and stir-fry until fragrant. Add shredded ginger and scallion sections, stir-fry until fragrant.
