Soak the fish jerky in cold water for a while (otherwise, if you stir-fry it directly, the fish meat will be too hard to chew).
Cut scallions, ginger, garlic, and chili into small pieces.
After the fish jerky is slightly softened, soak it in cooking wine (I don’t like to eat fish head, so I cut it off).
Pour oil into the pan, slightly more than the amount used for stir-frying vegetables, and stir-fry the ginger and garlic until fragrant.
Drain the fish jerky and add it to the pan, stir-fry with one tablespoon of cooking wine.
