Detailed Steps for Cooking Simple Version of White Cut Chicken
Clean the purchased chicken
Bring a pot of water to a boil, add sliced ginger and chopped green onions, then briefly blanch the cleaned chicken in the pot for two minutes until the skin tightens. Remove the chicken, rinse with cold water, bring the water in the pot back to a boil, then place the cooled chicken back in the pot, cover with a lid, turn off the heat, and let the residual heat cook the chicken through, approximately twenty minutes. The timing may vary depending on the size of the chicken and pot. Unfortunately, I forgot to take photos during this process.
Remove the chicken, drain excess water, and use a fan to dry the skin
While drying the chicken, chop the bullet chili peppers, green onions, and sand ginger into small pieces, heat some oil, add a pinch of salt and light soy sauce to create a dipping sauce
Cut the dried chicken into pieces and arrange on a plate
