Detailed Cooking Steps for Sincere Tofu
Prepare a block of firm tofu and a piece of cheesecloth for later use.
Use the cheesecloth to squeeze out the water from the tofu, set aside.
Add chopped green onions, egg white, cornstarch to the tofu, mix well.
In the ground pork, add prepared shiitake mushrooms, a pinch of salt and MSG, a little sesame oil, mix well. Chop the shrimp into a paste. Set aside.
Form the shrimp paste into balls, wrap them with a layer of ground pork.
It’s best to prepare all the “sincere fillings” first, so that when wrapping the tofu, the sizes will be uniform.
Take a piece of tofu, press it into a disc, wrap it around the meatball.
After wrapping the tofu, press it firmly with your hands.
Once all the balls are formed, set aside.
While wrapping the balls, you can prepare a pot of boiling water. The water should cover the balls completely. Boil the balls for 15 minutes after the water boils, then let them sit for 5 minutes.
While the balls are cooking, prepare the clam soup. Wash the clams, boil them in clean water until they all open their mouths, then add the cooked balls, some salt and MSG, a few drops of sesame oil, sprinkle with chopped green onions and cilantro before turning off the heat.
