Detailed Steps for Making Six-Inch Cake
Separate egg whites and yolks into two clean, oil-free bowls. Note: No egg yolk should be in the egg whites.
Add 15g of granulated sugar to the egg yolks, mix with milk.
Add tasteless and odorless cooking oil, mix well.
Sift in 50g of cake flour, mix well.
Mix well.
Add a few drops of vanilla extract to the egg whites.
Use an electric mixer to beat until soft peaks form, then add 10g of granulated sugar.
Beat until stiff peaks form, then add another 10g of granulated sugar.
Beat until there are visible ridges on the edges, then add the final 10g of granulated sugar.
Beat until there is significant resistance, many ridges on the edges, and the mixer forms sharp corners when lifted. Note: It must reach this state!
