Detailed Steps for Cooking Smoked Three Yellow Chicken
Clean the cavity of the whole Three Yellow Chicken, Garlic Barbecue Sauce, Japanese Teriyaki Sauce, Star Anise, Bay Leaves, Fennel Seeds, Sichuan Peppercorns, Spring Onion, Ginger, Maltose, Salt, Water, Brown Sugar, Jasmine Tea.
Prepare the seasoning water by boiling water with spring onion, ginger, star anise, bay leaves, fennel seeds, and Sichuan peppercorns. Add salt when the water boils.
Pour the seasoned water into a basin to cool. Once the water is cool, soak the Three Yellow Chicken in it for marinating the base flavor, which takes about 6-8 hours.
After marinating, blanch the chicken in boiling water for about 3-5 seconds and immediately remove it.
In a mixing bowl, combine garlic barbecue sauce, Japanese teriyaki sauce, and maltose. Mix well.
Use your hands to spread the mixture inside the chicken cavity and over the chicken.

Apply a layer of garlic barbecue sauce on the chicken.
Return the chicken to the oven and continue baking. After 15 minutes, apply another layer of barbecue sauce. Finally, bake the chicken until fully cooked with a golden red skin (approximately 30-40 minutes).
Remove the cooked chicken from the oven.
Slice the chicken with a knife, arrange on a plate, and serve.
