Steps to Cook Snow Meimei Niang
Prepare the ingredients
Mix glutinous rice flour, cornstarch, and sugar together until well combined
Add milk and mix well
Sift the mixture twice for a smoother batter, then let it rest in the refrigerator for half an hour
Steam for 25 minutes, take out and let it cool to warm, then knead in corn oil gradually
Divide into 35g portions, make 18 portions
Roll each portion into a round shape with both hands
Whip the whipping cream with sugar until stiff peaks form
Cut the fruits into pieces and set aside
Take a portion of dough, roll it out into a thin sheet between two layers of plastic wrap
Place the sheet in a small bowl lined with plastic wrap, remove the top layer of plastic wrap, flip the sheet onto the bowl, then remove the top layer of plastic wrap without touching the dough
Fill the whipped cream into a piping bag with a nozzle for easy piping
Pipe a layer of cream on the sheet, place fruits on top
Pipe another layer of cream on top of the fruits
Fold the edges towards the center and pinch to seal
Coat with cake flour
For Oreo version, pipe cream first, add two spoonfuls of crushed Oreo cookies, pipe more cream on top, then seal
After coating with cake flour, place in Snow Meimei Niang paper cups, refrigerate to set for at least 2 hours for better texture
