Detailed Steps for Cooking Soft and Light like Cotton – Castella Super Soft Toast
First, make the Castella sauce by putting all the ingredients into a pot.
Stir well and heat over low heat while stirring constantly.
Stir until it becomes a paste, then remove from heat and let it cool. Cover with plastic wrap and refrigerate for 60 minutes before use.
Mix the dough ingredients and Castella sauce together using the oil method, and knead until fully developed (I love these gloves today).
Place the dough in a warm place to ferment.
Ferment until it is 2-2.5 times larger.
After fermentation, remove the dough and deflate it. Divide it into 6 equal portions, roll them into balls, cover them with plastic wrap, and let them rest for 15 minutes. Then, roll them into an oval shape with the same width as the toast mold.
Roll them up from top to bottom after flipping them over.
Roll them into a cylindrical shape, but don’t roll them too tightly.
Place the rolled dough with the seam facing down into the toast mold.
Then, put it in a warm and humid place for the final fermentation, until the toast mold is 90% full.
After fermentation, brush the surface evenly with egg white, and bake in a preheated oven at 200 degrees Celsius for 40 minutes.
