Steps to Cook Sour and Spicy Frog with Pickled Vegetables
Choose fresh frog, wash, peel, cut into pieces, marinate with salt, Sichuan peppercorn powder, and cooking wine for half an hour to remove the fishy smell.
Blanch the marinated frog in boiling water for three minutes, add cooking wine to remove the fishy smell again.
Heat oil in a pan, add ginger, garlic, scallions, and Sichuan peppercorns, stir-fry until fragrant, add pickled vegetables, stir-fry until aromatic.
Add enough hot water to the pickled vegetables, bring to a boil, then add the frog and cook for five minutes until fully flavored. Serve hot!
