Detailed Steps for Cooking Sour and Spicy Pork Noodle Soup
Chop scallion, ginger, and garlic into sections. Rinse pickled cabbage with water several times to remove some of the salt. Cut the pork into thin strips and marinate with soy sauce and a little starch for a moment.
Heat the pan and add oil. Add Sichuan pepper and peppercorn to the oil and stir-fry over low heat until fragrant. Add scallion, ginger, and garlic and stir-fry until fragrant.
Add the pork strips and stir-fry. Remove a portion and set aside.
Add the pickled cabbage and stir-fry.
Add an appropriate amount of chicken stock or water and bring to a boil. Cook for 2 minutes, then add soy sauce, salt, chicken stock cube, and pepper powder to season.
