Remove the marinated sour string beans from the jar, soak them in clean water for an hour, changing the water twice in between to remove some of the saltiness and sourness.
Drain the soaked sour string beans and cut them into small cubes, set aside.
Cut the cooked pork tenderloin into small cubes, set aside.
Prepare the chopped pickled chili peppers; Prepare the chopped green onions, ginger, and garlic.
Heat a wok, add some peanut oil, heat until 70% hot.
Add minced ginger and garlic, stir-fry until fragrant.
Add the diced sour string beans, stir-fry over medium heat until well mixed.
Add the diced pork tenderloin, stir-fry until well mixed.
Add 1 tbsp of light soy sauce for coloring and seasoning.
Add 1 tbsp of oyster sauce for seasoning.
Add a little salt and hot water, simmer over medium heat for five minutes.
Add the shredded green onions.
