Steps to Cook Soy Milk Beef Ball Soup
Wash the soybeans and soak for 12 hours
Grind the soaked soybeans in a food processor, then cook with the bean dregs. Once the soy milk boils, reduce heat to medium-low and continue cooking for about 5 minutes to increase the milk yield
Strain the cooked soy milk to remove the bean dregs
Slice the shiitake mushrooms and set aside
Wash the Chinese cabbage and set aside
Remove the beef balls and set aside
Reheat the soy milk until boiling
Add the prepared ingredients to the boiling soy milk and cook for 8 minutes. Serve hot, garnish with chopped scallions
