Trim the radishes, wash them clean.
Cut the radishes into uniform strips and place them in a bowl.
Add eight spoons of salt.
Mix the salted radishes well and pickle overnight.
The radishes have released moisture and are now well seasoned.
Transfer the pickled radishes to a cheesecloth bag, tie it up, and put it in the washing machine to spin dry. (The cheesecloth bag is specially made for pickling)
Spread the dried radishes evenly on a board and place them on a sunny windowsill to dry for two days. (This drying time is only suitable for northern climates, as the northern sunlight is abundant and the air is dry)
After two days, the radishes are dried, and it’s time to add the seasonings.
Add two spoons of white wine, three spoons of Sichuan peppercorn oil, three spoons of sesame oil, two spoons of sesame red oil chili, two spoons of white sugar, one spoon of Sichuan peppercorn powder, one spoon of five spice powder, half a spoon of chicken essence, half a spoon of MSG, and mix well with your hands.
Place the mixed spicy and flavorful dried radish slices in a clean airtight container and store in the refrigerator.
After two days, my spicy and flavorful dried radish slices are ready to be enjoyed.
