Detailed Steps for Cooking Spicy Capsicum and Dried Bean Curd Stir-Fry
Soak a handful of dried bean curd in water until soft. I soaked it in cold water for three hours.
Peel and wash an appropriate amount of pork leg meat. Today, I have a bit less meat. Cut it into shreds and set aside.
Cut the pork into shreds slightly wider than usual. Marinate the shreds with a little light soy sauce, a little cooking wine, a little ginger powder, white pepper powder, a little cooking oil, mix well, then add a little water and cornstarch, mix well, and marinate for ten minutes.
Other ingredients: two green capsicums, one red capsicum, three cloves of garlic, a small piece of ginger. If you like it spicy, you can add more capsicum. I cooked a single portion, so I used less ingredients.
Remove the stems and seeds from the capsicums, wash them, and set aside. Peel the ginger and garlic, wash them, and set aside.
Cut the capsicums into small pieces, slice the ginger thinly, and slice the garlic, and set aside.
Cut the soaked dried bean curd into sections and set aside.
Heat the pan with oil, stir-fry the marinated pork shreds until they change color, turn white, and are cooked. Drain the oil and set aside.
Leave some oil in the pan, add the ginger and garlic slices, stir-fry until fragrant.
Add the dried bean curd and stir-fry.
Pour in some light soy sauce, stir-fry evenly, add a little water, and simmer the dried bean curd for two minutes.
Add the capsicums and stir-fry evenly.
Add the cooked pork shreds, drizzle with a little oyster sauce, stir-fry for one to two minutes, taste for seasoning, add a little salt and chicken essence as needed, then it’s ready to serve.
