Prepare the ingredients, make cuts on the chicken wings for better flavor absorption, cut the bullet chili peppers into strips, and finely chop the ginger and garlic.
Make cuts on the chicken wings, add ginger, light soy sauce, and cooking wine for marination for half an hour.
Boil the chicken wings in cold water (it’s recommended to start with cold water for meat to prevent blood seepage), cook for another 2-3 minutes after the water boils to ensure the chicken is fully cooked and no blood remains inside.
Remove the chicken wings, rinse off any foam with cold water, and drain.
