Steps for cooking Spicy Chicken
Cut the chicken chunks into small pieces of 2-3 cm and put them in a bowl. Add soy sauce, cooking wine, monosodium glutamate, salt, and ginger slices for marinating. It is recommended to prepare in advance. The longer the marinating time, the better the taste.
Wash the dried chili peppers and dry them with a paper towel. Then cut them into sections with scissors.
Wear gloves when cutting, otherwise your hands will be very spicy.
Cut the scallions and garlic into slices.
Pour half a pot of oil into the pan. When the oil is 80% hot, add the chicken chunks and fry them over medium to high heat until golden brown.
It takes about 5-8 minutes. Remove the chicken from the pan and drain the oil.
Leave a little oil in the pan, add ginger slices and garlic, and slowly stir-fry over low heat until fragrant.
Add the dried chili peppers and Sichuan peppercorns to the pan and stir-fry until fragrant and spicy.
Then add the fried chicken pieces and stir-fry for 2-3 minutes over medium heat. Keep stirring until the oil in the pan is almost absorbed and the chili peppers and Sichuan peppercorns are fragrant and slightly charred. Add monosodium glutamate and a little sugar (for seasoning), and it’s ready to serve.
