Soak the lobster tails in water for ten minutes and wash them clean. Cut all the chili peppers into sections.
Heat the oil in a pan. Turn off the heat when the oil starts to smoke and let it sit for 10 minutes.
Turn the heat to low and add a handful of Sichuan peppercorns. When the peppercorns start to bubble, add all the other chili peppers. I used Devil Chili for the dried chili peppers. Then add two tablespoons of Hai Di Lao small lobster stir-fry sauce.
