Detailed Steps for Cooking Spicy Lobster Tails
Preparation: Lightly tap the scallions, ginger, and garlic with a knife to bring out the fragrance. Wash and dry the lobster tails with kitchen paper towels. Use one bag of little lobster seasoning.
Fry 200g of lobster tails in oil at 180-200 degrees Celsius until they turn golden brown.
Put 30g of cooking oil in a pan and stir-fry the scallions, ginger, and garlic until fragrant.
Add 60g of little lobster seasoning and stir-fry briefly.
Add the fried lobster tails and stir-fry over high heat.
Add 200g of water (or beer – but the taste will be different) and cover the pan. Cook over medium heat for about five minutes. Do not open the lid immediately after turning off the heat. Let it simmer for a few more minutes.
After a few minutes, remove the pan from the heat and let the lobster tails soak in the broth. The residual heat of the broth will continue to cook the lobster tails and prevent them from becoming too tough from overcooking. After the broth has cooled, flip the lobster tails over. It is best to refrigerate them overnight before eating to allow the flavors to fully develop.
