Prepare washed bitter melon, chili peppers, cherry tomatoes, ginger, and garlic.
Cut the bitter melon in half, remove the seeds, scrape off the white part as much as possible, and slice diagonally. Julienne the chili peppers and ginger, cut the cherry tomatoes in half, and crush the garlic cloves.
Heat the oil in a pan, then stir-fry the crushed garlic and julienned ginger until fragrant.
Add the bitter melon and chili peppers, stir well.
