Wash the conch: I used frozen conch, thaw the conch in cold water, then rub and wash the conch in water with both hands, repeat several times until a lot of impurities float on the water surface. Then lift the conch out of the basin with your hands, put it in another basin, and continue washing with water. There will be some fine mud and mucus on the head of the conch, this is the only way to clean it, rinsing is not enough.
Put the washed conch in cold water, heat over low heat until boiling, then heat for about ten seconds, and remove the conch.
Drain the water and set aside.
Heat the wok and oil, sauté the chopped scallions and garlic, add crushed red pepper and shredded ginger, stir-fry briefly.
