Detailed Steps for Steamed Pork Ribs with Pickled Chili and Chinese Yam
Wash and peel the Chinese Yam, then cut it into chunks and put it in a dish. (Lipo Taro is also a good option.)
Cut the tomatoes into small dices and set aside.
Put the pork ribs in a bowl, add two pinches of baking soda, and keep stirring with your hands. Using baking soda can make the pork ribs tender and easy to cook.
Rinse the pork ribs twice with water, and keep stirring with your hands while rinsing.
Add a little salt to the rinsed pork ribs and keep stirring with your hands until they become shiny.
Add oyster sauce, dark soy sauce, sugar, and keep stirring with your hands.
Then add pickled chili, fermented black beans, tomato dices, and a little cornstarch, and keep stirring with your hands.
Finally, add a little sesame oil and stir well.
Spread the marinated pork ribs on top of the Chinese Yam. Heat up the steamer, put it in, and steam for about 20 minutes over high heat until the pork ribs are cooked and the bones are exposed.
Take it out, sprinkle with scallion and coriander, and serve. (If you like it more flavorful, you can add some hot Sichuan pepper oil.)
