Detailed Steps for Making Steamed Rice Cake
Wash the red dates and soak them for an hour to soften. Pour boiling water over the cornmeal.
Let the boiled cornmeal cool, then mix it with yeast for fermentation. Ferment the cornmeal that has been scalded with boiling water again to enhance the stickiness of the cake.
Use a tool to remove the pits from the red dates.
After processing the red dates and fermenting the cornmeal slightly, mix the fermented cornmeal with yellow glutinous rice flour evenly, and stuff each red date with the mixture.
Seal the ends of the red dates with your fingers. This step can be skipped if you find it troublesome.
Mix the red dates with the flour mixture and use your thumb to make indentations for better steam penetration.
It’s best to use non-stick parchment paper. Place in a pot of cold water, then steam over medium heat for 30 minutes after the water boils.
Try to add more dates to prevent the cake from collapsing during steaming.
After turning off the heat, let it sit for two minutes, then transfer to a cooling rack. Make sure to grease the rack, or the cake will stick.
