Soak the black fungus in advance, wash and cut into small pieces. Cut the ginger into chunks, and soak the salty chicken pieces for 5 hours, changing the water several times in between.
Preheat the pan with corn oil, add the chicken pieces, and stir-fry with black fungus.
Add 400g of water, stew over medium heat for 30 minutes. No need to add salt. Add a little light soy sauce for flavor.
