Detailed Steps for Cooking Sticky Rice Eggs
1. Soak sticky rice in water for over 4 hours, I soaked it overnight, forgot to take a photo, then drain the sticky rice and set aside.
2. Dice carrots, shiitake mushrooms, and pork, leave corn kernels and green peas as they are if using frozen, marinate the ground pork with a little soy sauce for about 10 minutes.
Mix the sticky rice and ingredients together, add some soy sauce according to personal taste preference.
Wash the salted duck eggs, make a small hole in the egg, pour out the egg white as much as possible.
Stuff the well-mixed filling into the eggs, fill them about 90% full as the sticky rice will expand.
Steam for 30 to 40 minutes, once the sticky rice expands, it’s ready to be served.
If you want to give them to friends, you can wrap them in aluminum foil for good insulation.
