Rinse the purple celery and blanch in cold water.
Cut the purple celery into sections and set aside to drain.
Shred the fried tofu, slice the green pepper into strips, and chop some spring onion.
Heat a pan, add some oil, and stir-fry the spring onion until fragrant.
