Prepare the ingredients.
Wash and cut the garlic scapes into sections, slice the five-spice tofu thinly, cut the scallions and ginger into small pieces, and cut the carrots into strips.
Blanch the garlic scapes in boiling water to remove the spiciness and then cool them down.
Heat the wok and add a little oil. Stir-fry the scallions, ginger, and dried chili until fragrant.
Add 1 tablespoon of oyster sauce and 1 tablespoon of Thai sweet chili sauce and stir-fry until fragrant.
Add the tofu and stir-fry briefly. Add a little salt and white pepper powder and stir-fry until well combined. Then add the carrots.
Finally, add the garlic scapes and a little chicken powder. Stir-fry over high heat until well combined. Turn off the heat when the garlic scapes are cooked but still crisp.
Transfer to a plate and serve.
