Cut the round cabbage into square pieces about 2 fingers wide, slice the tomatoes thinly, and beat the egg.
Heat the oil to 80% hot, pour in the beaten egg and remove it for later use.
Heat the remaining oil left from frying the egg to 70% hot, add scallions and stir-fry until fragrant, then add the round cabbage pieces and stir-fry for one minute before adding soy sauce.
