Wash the round eggplant.
Cut it into long strips.
To reduce oil absorption, marinate the eggplant. Add 1 tablespoon of salt.
Evenly spread the salt on the eggplant strips and marinate for ten minutes.
Rinse the marinated eggplant strips with water to remove some of the saltiness, then squeeze out the water with your hands.
Heat a wok with a little oil. The marinated eggplant won’t absorb much oil. Add the eggplant strips and stir-fry.
After stir-frying for four to five minutes, the eggplant strips become soft. Add a little soy sauce and pour 1 tablespoon of vinegar. Stir-fry evenly.
