Main Ingredients: Baby Bok Choy, Pork Belly, Vermicelli
Slice the pork belly thinly and cut each baby bok choy into eight pieces lengthwise.
Chop the scallion, ginger, and Pixian Douban (Chili Bean) Sauce finely.
Soak the vermicelli in warm water until slightly softened.
Heat a little cooking oil in a wok and stir-fry the pork belly.
When the pork belly changes color and releases oil, add scallion, ginger, and Pixian Douban (Chili Bean) Sauce.
Stir-fry over low heat until the oil turns red.
Add the cut baby bok choy and stir-fry briefly, then add the vermicelli.
